RECIPE: Jev's Quick Mexican Crockpot Dinner

When I visited my brother, who has three little boys, he made this delicious Mexican-style chicken dish. It was delicious, colorful, and his kiddies love it. Best of all? It was super easy. I hope your kids love it as much as Jev’s.

RECIPE: Quick Air Fryer Pork Chops

For fast week night dinners, we love our air fryer. Not only do they make amazing veggies (we love air fried carrots, sweet potatoes, and cauliflower), but we also use it to cook meat. The meat turns out delicious and juicy every time, so it is a real go-to for a quick meal with easy cleanup. The only down side is that we have to cook the veggies on the stovetop. ;)

RECIPE: Bacon Wrapped Jalapeño Poppers

Jalapeño poppers are a perfect finger food at parties. They feature prominently at our house as a dinner side because my 11-year old loves assembling and eating them. So it is a good way to involve him in meal preparation.

RECIPE: Oven-cooked Bacon

Most folks cook bacon on the stovetop, but I love the flavor and ease of cooking it in the oven. Bacon in the oven is a delicious way to create exciting new flavors and mix up breakfast offerings. Plus, the recipe is easy to scale up to feed an entire pack of hungry folks. Cleanup is a snap, too!

RECIPE: Quick BBQ chicken

This is my go-to quick and easy recipe for getting dinner in the oven fast so I can go water the garden or walk my dog and come back to a delicious feast!  Accordingly, I play it a bit fast and loose with the ingredients.

RECIPE: Burgers Aren't Boring

Forget boring burgers. At home you can use your creativity and whatever you happen to have in the fridge to make them a smorgasboard! Try different ground meats like lamb for exciting different flavors!

RECIPE: Chinese Five Spice Chuck Roast

The beauty of this cut is that there is a lot of flexibility in how you can cook it. It’s amazing as an all-day-long oven-bake that fills the house with amazing smells, or as a quick and easy mid-week meal either in the crock pot or pressure cooker. This twist on the classic chuck roast comes from the Chinese five spice. It imparts a sweet, fall-like flavor to the dish.

RECIPE: BBQ Pork Shoulder

One of my favorite southern foods is BBQ, especially North Carolina style with the vinegar-based sauce. I love the combination of rich meat flavor with the spicy vinegar zing. And I was completely astonished at how simple it is to do at home!
