Yogurt Marinade for Lamb Kabobs
Nate's favorite marinade recipe for perfect lamb kabobs!

Ingredients

  • (1 c) Plain yogurt
  • (1/4 c) Fresh lemon juice
  • (1 tsp) Zest from 2 lemons
  • (2 Tbsp) Extra-virgin olive oil
  • (1/2 c) Mint leaves, tightly packed
  • (1/4 c) Cilantro leaves, tightly packed
  • (2 Tbsp (about 6 medium cloves)) Garlic, freshly minced
  • (1 Tbsp) Kosher salt
  • (1 Tbsp) Sweet paprika
  • (1 Tbsp) Freshly ground black pepper
  • (2 lbs) Lamb Kabob Meat

Directions

Tools you'll need:

  • Grill or grill pan
  • Skewers

Instructions

  1. Place the lamb in a large bowl, season with salt and pepper.
  2. In a medium bowl, combine all the remaining ingredients.
  3. Pour the marinade over the lamb and mix well. Cover and refrigerate for 2 hours or as long as overnight. If you’re in a rush, let the kabobs marinate at room temperature for 30 minutes).
  4. Heat a grill or grill pan and brush with oil.
  5. Drain the lamb, shaking off any excess marinade.
  6. Push the lamb onto long skewers, leaving a little space between pieces. 
  7. Brush the lamb with oil and grill the skewers over high heat for about 5 minutes, turning every couple minutes, until lightly charred and cooked medium rare.
