Yogurt Marinade for Lamb Kabobs

Nate's favorite marinade recipe for perfect lamb kabobs!
Ingredients
- (1 c) Plain yogurt
- (1/4 c) Fresh lemon juice
- (1 tsp) Zest from 2 lemons
- (2 Tbsp) Extra-virgin olive oil
- (1/2 c) Mint leaves, tightly packed
- (1/4 c) Cilantro leaves, tightly packed
- (2 Tbsp (about 6 medium cloves)) Garlic, freshly minced
- (1 Tbsp) Kosher salt
- (1 Tbsp) Sweet paprika
- (1 Tbsp) Freshly ground black pepper
- (2 lbs) Lamb Kabob Meat
Directions

- Grill or grill pan
- Skewers
Instructions
- Place the lamb in a large bowl, season with salt and pepper.
- In a medium bowl, combine all the remaining ingredients.
- Pour the marinade over the lamb and mix well. Cover and refrigerate for 2 hours or as long as overnight. If you’re in a rush, let the kabobs marinate at room temperature for 30 minutes).
- Heat a grill or grill pan and brush with oil.
- Drain the lamb, shaking off any excess marinade.
- Push the lamb onto long skewers, leaving a little space between pieces.
- Brush the lamb with oil and grill the skewers over high heat for about 5 minutes, turning every couple minutes, until lightly charred and cooked medium rare.
