Stuffed Mushrooms

Our whole family loves these stuffed mushrooms, which my mother in law brings to nearly every family gathering because we all beg for them! I recently asked for her recipe, and was pleasantly surprised at how easy they are to toss together. Since I can’t follow an original recipe to save my life, I added my own twist to these, and my husband agreed that they’re (almost) as good as hers. These are a family favorite for holiday gatherings, but I like to whip up a big batch on the weekends and have them ready to go in the fridge for quick snacks during the work week, too.

Ingredients
- (1 lb.) Country Sausage
- (1 block) Cream Cheese
- (1/4-1/2 C.) Parmesan cheese (shredded)
- Seasonings of choice (salt, pepper, garlic, herbs)
- Mushrooms (cleaned and stems removed)
Directions
- Brown meat in a cast iron skillet and minced garlic, fresh herbs, salt, and pepper to taste.
- Add cream cheese and parmesan and stir until fully melted.
- Fill each mushroom with about 1 Tbsp of the sausage mixture, give or take. Place mushrooms in a large cast iron skillet or on a cookie sheet.
- Sprinkle with remaining parmesan and bake at 425°F for about 20-25 minutes, until mushrooms are tender and the filling is slightly crispy on top.
