Uncle Dick's Eggplant Soup

Grab a package of 100% grassfed ground beef and harvest your fresh garden veggies! You are going to love this easy prep, hearty meal. Eileen grew up enjoying this dish, and it's still a favorite to share among friends.
Ingredients
- (2 Tbsp) Butter
- (2 Tbsp) Olive oil
- (1 lb) Ground Beef, 1 lb pkg
- (1 clove) Garlic, minced
- (1 c) Carrot, chopped
- (1 medium) Onion, chopped
- (1 small) Eggplant, diced
- (1 c) Celery, sliced
- (1 can (1lb or 12 oz)) Canned tomatoes, stewed and peeled
- (2 cans) Beef broth, no water (or beef consomme, no salt)
- (1/2 tsp) Pepper
- (1/2 tsp) Nutmeg
- (1 c) Macaroni, raw
- (1 Tbsp) Parsley
- (To taste) Parmesan and mozzarella cheese (on top, when serving)
Directions
- Brown the ground beef and onions in oil and butter.
- Add the rest of the ingredients, except the macaroni, parsley, and cheese.
- Simmer for 40 minutes or until all the vegetables are done.
- Add the macaroni and parsley, cook until the pasta is done.
- Add parmesan and mozzarella cheese on top.
