Parmesan Pork Rib Roast
This surprisingly easy-to-prepare dish delivers elegant presentation and over-the-top flavor. Savory pork drippings make your potatoes memorable while the parmesan topping adds a crunch to every delicious bite of the tastiest pastured pork you've ever eaten.

Ingredients

  • (2 Tbsp) Olive oil
  • (1 C) Bone broth
  • (½ tsp) Salt
  • (â…› tsp) Black pepper
  • (1 tsp) Dried herbs (sage or thyme are great options)
  • (½ C) Shredded Parmesan cheese
  • (¼ C) Grated Parmesan cheese
  • (4 large) Potatoes, peeled and cut into 1 inch cubes.
  • (½ C) Olive oil
  • (6 cloves) Garlic, finely chopped
  • (1 Tbsp) Dried herbs, finely chopped (sage or thyme are great)
  • (1 Tbsp) Unsalted butter, melted
  • (~ 4 lbs) Pork Rib Roast

Directions

Tools you'll need:

  • 16 inch roasting pan or cast iron to fit both the roast and potatoes (you’ll combine them!)
  • 1 large or 2 med skillets for potatoes

Instructions

  1. Fully thaw pork roast before preparing.
  2. Preheat oven to 350°F
  3. In a small bowl, combine the olive oil, herbs, 1 Tbsp of the bone broth, salt, and pepper. Roll the pork roast in this mixture, then roll in both types of Parmesan cheese to coat, making sure most of the cheese is applied to the top or fat cap of the roast.
  4. Place roast in a roasting pan or cast iron skillet with the bones down, fat cap up. Top with any remaining cheese.
  5. Add remaining bone broth to bottom of pan to prevent scorching.
  6. Roast uncovered for 45 min.

Potatoes

  1. Add olive to large skillet and heat on med-high. Combine remaining ingredients and add to skillet. Toss occasionally until golden brown but firm, 10-15 min.
  2. When pork roast has cooked 45 min, remove from oven. Scatter potatoes around roast, turning them in the pan drippings.
  3. Return to oven and roast uncovered until pork is browned and cooked through (135°F internal temperature) and potatoes are fork tender, about 1 hr.
  4. Remove from oven and allow to rest 15 min.
  5. For best slicing, carve the bone out horizontally, and slice serving vertically.
  6. Enjoy!
