Glaze to Amaze
Cheers to the awesome farmers’ market customer who stopped by our booth a few weeks ago and shared this 4-ingredient glaze recipe with us.  We've eaten many-a pork steak in our day, and these were, perhaps, the most memorable.

Ingredients

  • (1 package - 4 chops included) Pork Chops
  • (Or try these heftier, farmer favorite!) Pork Steak
  • (1/2 stick) Butter
  • (1/4 C) Honey
  • (1/4 C) Brown sugar
  • (1 shot, or 3 Tbsp) Bourbon (or rum, or vanilla extract)

Directions

Glaze:

  1. In a saucepan over medium heat, melt the butter, add the honey and brown sugar, and bring to a simmer while stirring constantly.  The only trick to this recipe is to manage the heat so it doesn’t scorch or boil over.  
  2. Allow to simmer for 5 min while stirring continuously.  Add bourbon, and continue stirring until the mixture returns to a simmer.  You’re done!  
  3. Your glaze is ready to slather on your delicious cuts of chops or steaks.  You can cook your steaks and chops however you like.  Chops are great on the grill, cast iron, or you can bake them in the oven.  Pork steaks benefit from a slower cooking method, like slow bake or smoking.

Whatever method you use, wait until the end to apply your glaze so you avoid scorching and charring.

Cooking your steaks and/or chops:

Here’s a simple approach that will work in an oven or Traeger style pellet grill/smoker:

  1. Preheat to 250°F
  2. Cook side one for ~30 min
  3. Flip steaks or chops and cook for another ~20 min
  4. Apply glaze in the final stage of cooking.  Brush on your meats, and continue cooking until you reach an internal temperature of 145°F

Note:  If you are using a high heat cooking approach like frying in a cast iron, apply your glaze immediately when you flip your meats–those pasture-raised pork cuts cook faster than you think!

Apply the glaze, and cover with a lid to help maintain the heat and help the glaze bake and stick to your delicious cuts.
