RECIPE: Ham Hock Salad

This salad is one part of a ham hock trilogy. I used 4 ham hocks and made 3 different dishes; one green salad topped with ham hock meat, this mayonnaise-based salad, and a good old fashioned pot of ham hocks and beans.
Ingredients:
- 1 or 2 Ramstead smoked fully cooked ham hocks (~2 c diced meat)
- 4 slices of jalapenos, diced
- 3 Tbsp mayonnaise or to taste
- 2 Tbsp wholegrain mustard
- 2-3 tsp lemon juice
- ¼ c chopped cilantro
- 1-2 Tbsp minced garlic
- ½ cup chopped onion
- 1 Tbsp capers
- ½ c chopped carrot
- ½ c chopped celery
- Salt and pepper to taste
Instructions:
- Combine all the above ingredients and mix well.
- Serve as sandwich or as stand alone on lettuce leaves.
