RECIPE: Ham Summer Salad

Looking for an easy way to keep wholesome protein on hand this summer? This fresh ham salad transforms pasture-raised smoked ham into a versatile meal that's ready whenever you are. Packed with protein and simple ingredients, it's delicious served on greens, tucked into a sandwich, or enjoyed as a quick snack. Best of all, it keeps your kitchen cool while delivering plenty of flavor.

Ingredients:

  • Diced Ham, Ham Steak, or Ham Hocks  (~2 c diced meat)
  • 4 slices of jalapenos, diced
  • 3 Tbsp mayonnaise or to taste
  • 2 Tbsp wholegrain mustard
  • 2-3 tsp lemon juice
  • ¼ c chopped cilantro
  • 1-2 Tbsp minced garlic
  • ½ cup chopped onion 
  • 1 Tbsp capers
  • ½ c chopped carrot
  • ½ c chopped celery
  • Salt and pepper to taste

Instructions:

  1. Combine all the above ingredients and mix well.
  2. Serve as sandwich, piled on top of lettuce leaves, or scoop using your favorite crackers.
