Grilled Skirt Steak with Chimichurri Sauce

Once I tasted this recipe I wondered where skirt steak had been all my life. You could try this on a Flank Steak or Hanging Tender. It’s simple enough to make the family favorite list!

Ingredients:

For marinade:

  • 1/3 cup olive oil
  • 1/3 cup dry sherry
  • 1/3 cup soy sauce (or coconut amines)
  • 2 Tbs honey
  • 1 tsp minced garlic
  • 1 tsp crushed red pepper
  • 1 C chimichurri sauce, optional but highly recommended!)

Tools:

  • Zip lock bag or shallow baking dish

Directions: 

  1. Season steak with salt and pepper.
  2. Combine olive oil, sherry, honey, garlic, and red pepper in the zip lock bag or baking dish.
  3. Place steak and let marinate on counter for 30 minutes.
  4. Preheat grill to high heat ( 500°F if possible).
  5. Remove steak from marinade and place on grill for 3-4 minutes per side (internal temperature of 125°F).
  6. Rest for 5 minutes.
  7. Slice against the grain.
  8. Enjoy
