Chimichurri sauce is a condiment that is more universal than its name suggests. It sounds like a special event only item, but I can think of dozens of our family-favorite meals that get even better when you add a little chimichurri.

Since there are many variations of this recipe, I feel free to add my own substitutions. My alternatives are in parentheses.

Ingredients:

  • 1 shallot- finely chopped (or 2 Tbs finely chopped onion)
  • 1 Fresno chili or red Jalapeno โ€“ finely chopped (or green Jalapeno and 2 Tbs sweet red pepper)
  • 2 Tbs minced garlic
  • ยฝ cup red wine vinegar
  • 1 tsp salt
  • ยผ cup parsley- finely chopped (or curly or Italian)
  • ยฝ cup cilantro finely chopped
  • 2 Tbs fresh oregano (or 2 tsp dry oregano)
  • ยพ cup olive oil

Tools:

  • Bowl
  • Whisk
  • Cutting board and knife

Directions:

  1. Combine shallot, peppers, garlic, vinegar, and salt. Let stand for 10 minutes.
  2. Stir in cilantro, parsley, and oregano.
  3. Whisk in olive oil.
  4. Sauce can be made ahead and stored until needed.

RECIPE: Homemade Corned Beef

Corned Beef Brisket is an annual tradition in our house. When we tried this homemade recipe a few years ago, the results were game-changing. It was as if weโ€™d finally eaten a real corned beef brisket, the one all the other store-bought corned beef briskets were trying to imitate. Experience aromatic flavors with spices you can distinguish. This is corned beef in high definition.
