Chimichurri Sauce

Chimichurri sauce is a condiment that is more universal than its name suggests. It sounds like a special event only item, but I can think of dozens of our family-favorite meals that get even better when you add a little chimichurri.
Since there are many variations of this recipe, I feel free to add my own substitutions. My alternatives are in parentheses.
Ingredients:
- 1 shallot- finely chopped (or 2 Tbs finely chopped onion)
- 1 Fresno chili or red Jalapeno – finely chopped (or green Jalapeno and 2 Tbs sweet red pepper)
- 2 Tbs minced garlic
- ½ cup red wine vinegar
- 1 tsp salt
- ¼ cup parsley- finely chopped (or curly or Italian)
- ½ cup cilantro finely chopped
- 2 Tbs fresh oregano (or 2 tsp dry oregano)
- ¾ cup olive oil
Tools:
- Bowl
- Whisk
- Cutting board and knife
Directions:
- Combine shallot, peppers, garlic, vinegar, and salt. Let stand for 10 minutes.
- Stir in cilantro, parsley, and oregano.
- Whisk in olive oil.
- Sauce can be made ahead and stored until needed.
