RECIPE: Turkey & Bean Chili

Want a great way to use leftover turkey or chicken?  I usually double the recipe and have no trouble with my family consuming all of it!

Ingredients

  • 2-3 Tbsp olive oil
  • 1 lb Ramstead Ranch turkey leftovers, diced (cooked)
  • Salt and pepper to taste
  • 3 cloves garlic, minced
  • 1 medium onion, chopped fine
  • 3 Tbsp chili powder
  • 1 tsp cumin
  • 1 – 14 oz can diced tomatoes or 2 C fresh tomatoes, chopped
  • 1 – 15 oz can tomato sauce
  • 2 medium roasted jalapeno peppers, chopped
  • 1 roasted poblano, chopped
  • 1 ½ tsp paprika
  • ½ tsp lemon juice
  • 1 – 15 oz can black beans (or I use pinto beans, pressure cooked ~ 20 minutes)
  • 1 C chicken broth
  • Cilantro and shredded cheese to garnish, optional

Tools

  • Knife and cutting board
  • Cookie sheet for roasting peppers
  • Heavy pot or slow cooker

Directions

  1. Sauté onion, garlic, and olive oil in pot until translucent.
  2. Add turkey and mix.
  3. Add chili powder, cumin, paprika, chopped peppers, broth, tomatoes, and tomato sauce.
  4. Simmer 45 min or until thickened.
  5. Add beans, and simmer for 15 min.
  6. Serve with cilantro, cheese, or garnish of choice.
  7. Savor and enjoy!
