RECIPE: Sweet Potato Dream

This sweet potato recipe is another staple at my holiday table. They are decadent, delicious, and my absolute favorite! I always make a second batch to enjoy with leftovers. I hope you love them as much as I do!

Ingredients:

  • 3 c sweet potatoes, mashed
  • 1/4 c white sugar (optional, if you prefer less sweet)
  • 1/3 c butter, melted
  • 2 eggs
  • 1 tsp vanilla extract
  • 1/2 c milk

Topping:

  • 1/3 c flour (optional)
  • 1 c packed brown sugar
  • 1 c chopped walnuts
  • 1/3 c butter, melted

Instructions:

  1. Preheat oven to 350°F.
  2. Combine everything except the toppings, mix well and put into an oven-safe baking dish (e.g., cast iron skillet, casserole dish).
  3. Combine topping ingredients and gently sprinkle over the top of the sweet potato mixture.
  4. Bake at 350°F until a toothpick, when inserted in center, comes out clean. Estimate 40+ minutes, depending on baking dish shape.
