Ingredients:

Tools:

  • Baking dish
  • Meat thermometer
  • Parchment paper

Instructions:

  1. Position oven rack to the middle and pre-heat to 350 °F
  2. Cut parchment paper large enough to reach slightly past sides of baking dish. Rub baking dish and one side of parchment paper with oil/butter
  3. Rinse chicken breasts and pat them dry. Rub with your choice of seasonings, salt, and pepper
  4. Place breasts in baking dish leaving space between each
  5. Lay the parchment paper over the breasts with the oil side down. Press the paper onto the breasts and down the sides. The paper should cover the breasts and make solid contact with the baking dish. If you have dry areas where the paper doesn’t stick to the dish, add oil/butter.
  6. Bake until the chicken reaches an internal temperature of ~165 °F. Begin checking temperatures after 20 min. For a 2 lb package, plan to cook approx. 30 min. For a 3-4 lb package of breasts, cook time is approx. 40 min.
  7. Enjoy!

Make sure the paper has good contact around the chicken breasts

Using a meat thermometer is a good idea. Poke it through the parchment and into the meat.

RECIPE: Quiche for All Occasions

I think quiche is underappreciated in American homes. It is a super flexible dish that you can eat hot out of the oven, cold on a picnic, or pretty much anywhere in between. It is great for breakfast, lunch or dinner, and can basically be stuffed with anything you have on hand and be delicious!

RECIPE: Ham Summer Salad

Looking for an easy way to keep wholesome protein on hand this summer? This fresh ham salad transforms pasture-raised smoked ham into a versatile meal that's ready whenever you are. Packed with protein and simple ingredients, it's delicious served on greens, tucked into a sandwich, or enjoyed as a quick snack. Best of all, it keeps your kitchen cool while delivering plenty of flavor.

RECIPE: Kabobs In The Broiler

Kabobs are an adventure! Entertaining to assemble, everyone can make their own to their exact preferences, and fun to eat. Kabob creation is a great way to break up the redundancy of fork and knife dinner time. And cooking options are flexible since kabobs are easy to grill outdoors or broil in the oven on a rainy day. Try switching it up by using lamb, pork, or chicken for variety.
