With simple ingredients that can easily be substituted for what you have on hand, this recipe produces hearty comfort food and happy bellies.  Thanks to the Penberthys for sharing this one with me at the farmers' market.  I say the BEST recipes have few ingredients and simple instructions.  Rather than an elaborate series of steps, my favorite recipes are concepts that leave a lot of room for substitutions and experimenting!

Ingredients:

  • 1 package Pork Steak
  • 1 jar of apple sauce (I substituted quartered apples.  The honey crisps from the market are amazing!)
  • 1 jar of sauerkraut
  • 1 beer (dark or light beer or I substituted kombucha because that is what I had on hand)
  • 1 onion coarsely sliced (was not part of the original recipe, but I found it to be a great addition)

Directions:

In a crock pot or instant pot, layer ingredients as follows:

  • meat in the bottom
  • add apples, or apple sauce, and onions if you want them
  • cover with sauerkraut
  • pour in beer or other flavorful carbonated fluid

In your favorite slow cooker, crock pot or instant pot, treat this like a small roast.  Cook on low (200 degrees) for 6 hrs or high (350 degrees) for 2 hrs.   Then enjoy to your belly's content. (NOTE: Farmer portions are pictured above.)

RECIPE: Quiche for All Occasions

I think quiche is underappreciated in American homes. It is a super flexible dish that you can eat hot out of the oven, cold on a picnic, or pretty much anywhere in between. It is great for breakfast, lunch or dinner, and can basically be stuffed with anything you have on hand and be delicious!

RECIPE: Ham Summer Salad

Looking for an easy way to keep wholesome protein on hand this summer? This fresh ham salad transforms pasture-raised smoked ham into a versatile meal that's ready whenever you are. Packed with protein and simple ingredients, it's delicious served on greens, tucked into a sandwich, or enjoyed as a quick snack. Best of all, it keeps your kitchen cool while delivering plenty of flavor.

RECIPE: Kabobs In The Broiler

Kabobs are an adventure! Entertaining to assemble, everyone can make their own to their exact preferences, and fun to eat. Kabob creation is a great way to break up the redundancy of fork and knife dinner time. And cooking options are flexible since kabobs are easy to grill outdoors or broil in the oven on a rainy day. Try switching it up by using lamb, pork, or chicken for variety.
