RECIPE: Chicken With Ginger Peach Glaze

Prep Time: 30 min.

Bake Time: ~45 min. (adjust to ~1.5 hr if cooking a full sized, 4 lb chicken)

Ingredients

For Bird

For Glaze

  • 1/4 tsp cinnamon
  • 1/4 tsp powdered ginger (or 1 Tbsp fresh grated ginger)
  • 1/4 tsp dried thyme
  • 3 shakes paprika
  • 1 tsp tapioca starch or corn starch to thicken
  • Sweetener of choice such as sugar, honey, etc
  • 2 fresh peaches, peeled and diced
  • 2 cups water

Directions

  1. Preheat oven to 400°F
  2. Mix dry glaze ingredients in a bowl. Add wet ingredients and peaches. In a sauce pan on medium heat, bring to a gentle boil and stir frequently.
  3. Rinse chicken and place in roasting pan
  4. Stuff chicken cavity completely full of peach wedges
  5. Melt butter and brush on the chicken
  6. Sprinkle with cinnamon, thyme, paprika, salt and pepper
  7. Place in the oven for 15 minutes
  8. Remove from oven and baste with glaze mixture. Leave 1/2 of glaze in sauce pan.
  9. Continue to baste bird every 15 min until it reaches 160°F in the breast (best to use a meat thermometer)
  10. When temperature is reached, remove from oven and spoon remaining glaze over bird before serving
