RECIPE: Jane's Ham

This ham will make you clean your plate. Many years ago when I was resident anesthesiologist at Denver Children’s Hospital, one of my mentors, Dr. Jane Battaglia, brought this ham to a pot luck. She shared the recipe with me and I’ll pass it on to you. It’s the best ham ever.


Ingredients:

For Boiling
1 Ham from Ramstead Ranch 4lbs
12 oz apple juice
1 c red wine
1 c cider vinegar
2 carrots, cut up
Parsley
1 onion, whole and peeled
12 whole cloves, stuck into the onion
Water or additional apple juice to cover ham in pot

For Glaze
2 c brown sugar
1 box (4 oz) Coleman’s dry English mustard
1 tsp ground cloves
Cider vinegar

Instructions:

For Boiling

  1. Combine ingredients for boiling.
  2. Simmer 1-2 hours.
  3. Peal off skin and fat.


For Glaze

  1. Mix first 3 ingredients then add vinegar until mixture forms paste.
  2. Cover ham with paste and bake ½ hour.
  3. Enjoy!
