RECIPE: Ham Hock Salad

This salad is one part of a ham hock trilogy. I used 4 ham hocks and made 3 different dishes; one green salad topped with ham hock meat, this mayonnaise-based salad, and a good old fashioned pot of ham hocks and beans.

Ingredients:

  • 1 or 2 Ramstead smoked fully cooked ham hocks  (~2 c diced meat)
  • 4 slices of jalapenos, diced
  • 3 Tbsp mayonnaise or to taste
  • 2 Tbsp wholegrain mustard
  • 2-3 tsp lemon juice
  • ยผ c chopped cilantro
  • 1-2 Tbsp minced garlic
  • ยฝ cup chopped onion 
  • 1 Tbsp capers
  • ยฝ c chopped carrot
  • ยฝ c chopped celery
  • Salt and pepper to taste

Instructions:

  1. Combine all the above ingredients and mix well.
  2. Serve as sandwich or as stand alone on lettuce leaves.
