Super Simple Chicken and Rice
This recipe is in our weekly meal rotation because we love it so much! It’s super versatile; you can slow cook your favorite cut of chicken specifically for this meal, or use whatever chicken leftovers you have on hand. We prefer chicken legs above all else in our chicken and rice! You can use whatever rice your family has on hand, too. I love to cook ours in bone broth and/or drippings from slow cooking the chicken to add extra flavor and nutrients. This meal is nourishing, hearty, and so, so delicious! I hope you love it as much as we do.

Ingredients

  • 2 Pkg Chicken Legs
  • (2-3 c) Your favorite rice (ideally cooked in bone broth)
  • (As needed) Butter
  • (1) Onion, chopped
  • (2 cloves) Garlic, minced
  • (1/3 c) Dry white wine (can substitute broth)
  • (1/3 c) Heavy cream
  • (To taste) Salt, pepper, freshly grated parmesan, lemon juice, and parsley

Directions

  1. Slow cook chicken using your preferred method OR shred leftover chicken. (You can use a whole chicken, 2 packs of chicken breasts, or whatever leftover chicken you have on hand)
  2. Cook rice in bone broth according to instructions on the package. We use about 2-3 cups of rice but you can use more or less depending on your preferences.
  3. Sauté onions and garlic in butter and white wine until onions are soft and translucent 
  4. Add shredded chicken, rice, and heavy cream to the onions and garlic
  5. Season with salt, pepper, fresh parmesan, lemon juice, and parsley to taste
  6. Garnish with more parmesan and serve!
