Slow Cooker Pork Zuppa

Enjoy this great weeknight dinner to warm the belly!
Go heavy on the red pepper or throw in your favorite hot sauce for a kick!

Ingredients
- (1 lb) Ground Pork
- (Or try with 1 lb) Country Sausage
- (3 containers, or ~60 fl oz) Ready-made Beef Bone Broth
- (1 Cup) Chopped onion
- (2 cloves) Minced garlic
- (2 Tbs) Cornstarch or your favorite thickener
- (~1 lb) Red new potatoes
- (2-3 Cups) Fresh kale
- (1 tsp) Red pepper
- (1 tsp) Dried oregano
- (1 1/2 Cups) Evaporated or whole milk
Directions
- In a large skillet cook pork, onion, and garlic cloves over medium heat until meat is brown and onions are tender. Drain off fat
- Add oregano and red pepper and cook for 1 minute longer on medium heat
- Transfer meat mixture to a 4-6 qt slow cooker. Add broth. Cut potatoes into small pieces and add to slow cooker.
- Cover and cook on high heat for 4-6 hours.
- For last hour of cook time, mix milk with cornstarch/thickener and stir until smooth. Add to slow cooker along with the chopped kale.
- Cover and cook an additional 60 minutes or until bubbly around edge of cooker and kale is tender.
- Serve with a warm smile. You're going to love this!
