Lemony Parmesan Pork & Rice

If you love traditional chicken and rice, then you should definitely give my Lemony Parmesan Pork and Rice a try! This recipe requires minimal ingredients and, with a bit of planning, comes together in a snap making it a perfect busy weeknight meal. Though I prefer Pork Shoulder Roast for this recipe, you can sub in any cut that you like to slow cook. Pro tip: be sure to double your bone broth rice so that you can enjoy leftovers!

Ingredients
- Pork Shoulder Roast
- (2-3 C) Rice *any*
- (as needed) Butter
- (1) Onion
- (2 C) Sliced Mushrooms
- (2) Garlic Cloves, minced
- (1/3 C) Dry White Wine (can substitute with broth)
- (1 cut in wedges) Lemon
- (for top garnishment) Parmesan
- (to desired taste) Salt & Pepper
Directions
- Slow cook your pork using your preferred method and shred.
- Use cooked pork bone broth to cook rice according to instructions on rice package.
- Saute onions, garlic, and mushrooms in butter until onions are soft and translucent.
- Add cooked shredded pork to the onion/garlic/mushroom mixture allowing it to crisp up a bit. Then add heavy cream.
- Deglaze your pan with white wine or broth.
- Add rice and stir; cover and cook according to directions on rice package.
- Add salt, pepper, fresh parmesan, and lemon juice to taste.
- Garnish with more parmesan and a squeeze of lemon before serving!
