Lemony Parmesan Pork & Rice
If you love traditional chicken and rice, then you should definitely give my Lemony Parmesan Pork and Rice a try! This recipe requires minimal ingredients and, with a bit of planning, comes together in a snap making it a perfect busy weeknight meal. Though I prefer Pork Shoulder Roast for this recipe, you can sub in any cut that you like to slow cook. Pro tip: be sure to double your bone broth rice so that you can enjoy leftovers!

Ingredients

  • Pork Shoulder Roast
  • (2-3 C) Rice *any*
  • (as needed) Butter
  • (1) Onion
  • (2 C) Sliced Mushrooms
  • (2) Garlic Cloves, minced
  • (1/3 C) Dry White Wine (can substitute with broth)
  • (1 cut in wedges) Lemon
  • (for top garnishment) Parmesan
  • (to desired taste) Salt & Pepper

Directions


  1. Slow cook your pork using your preferred method and shred.
  2. Use cooked pork bone broth to cook rice according to instructions on rice package.
  3. Saute onions, garlic, and mushrooms in butter until onions are soft and translucent.
  4. Add cooked shredded pork to the onion/garlic/mushroom mixture allowing it to crisp up a bit. Then add heavy cream.
  5. Deglaze your pan with white wine or broth.
  6. Add rice and stir; cover and cook according to directions on rice package.
  7. Add salt, pepper, fresh parmesan, and lemon juice to taste.
  8. Garnish with more parmesan and a squeeze of lemon before serving!
