Eggroll in Soup Bowl

This is my husband’s favorite dinner, hands down. The rich broth and simple ingredients make for an easy but deeply nourishing meal, too. The beauty of this soup is that unlike many others, it doesn’t need to simmer all day. You can add your favorite noodles if you like!

Ingredients
- Ground Pork
- Lard
- Chopped cabbage, garlic, onion
- (2 qts.) Broth (your choice of flavor)
- Salt & Pepper
- Rice wine vinegar, tamari, Sriracha, sesame oil
- (garnishment) Green onions
- Soy sauce
Directions
- Heat lard in soup pot and brown ground pork, breaking it up as it cooks.
- Add chopped veggies and cook until they are tender, stirring occasionally.
- Season with salt and pepper to your liking (remember that tamari/soy sauce are salty, too!)
- Add broth and allow to simmer for about 20-30 minutes.
- Add noodles of choice for the last 10ish minutes of simmering.
- Add rice wine vinegar, tamari, Sriracha, and sesame oil to taste.
- Garnish with green onions and enjoy!
