RECIPE: Sirloin Tip Beef Stroganoff

This meal is comfort food in a bowl!  You can make it fancy with homemade noodles, or keep it easy and use whatever you have on hand.  For maximum flavor, add drippings from pot roast or short ribs to your sauce!

Ingredients

  • 1 lb Ramstead Ranch sirloin tip steak (hint, you can use beef or bison!)
  • 2-3 Tbsp bacon grease
  • 2-3 Tbsp flour 
  • 4 C broth 
  • 2-4 C white wine
  • 2-3 Tbsp butter
  • 1 onion, diced
  • 4 cloves garlic, minced 
  • 1 container of mushrooms, sliced
  • ½ C sour cream
  • ¼ C milk 
  • Fresh herbs of your choice: parsley, sage, and rosemary are all delicious 

Instructions

  1. Fully thaw the steak, and cut into cubes.
  2. Melt bacon grease in a Dutch oven.  Brown the meat on all sides, adding salt and pepper if desired. 
  3. Add broth and cover. Allow to simmer on low for several hours, or cook in oven at 250 for several hours until fork tender. 
  4. Tip: this step can easily be done a day ahead of time.  Feel free to add pot roast or short rib drippings now, too!
  5. In a cast iron, melt butter, and saute onion, garlic, and mushrooms until soft.
  6. Add flour and allow to cook for 2-3 minutes, stirring constantly. 
  7. Deglaze with white wine, and remove from heat while stirring constantly. 
  8. Add a few ladles of broth from your Dutch oven to the pan, stirring constantly. 
  9. Pour skillet contents into the Dutch oven so that all ingredients are now in the Dutch oven. 
  10. Add noodles, and allow to simmer until they are cooked through. 
  11. Mix sour cream and milk until smooth, then pour into Dutch oven. 
  12. Garnish with fresh herbs and enjoy!
