A medium-sized flat steak that is about 1/2 inch thick. This steak is of medium tenderness. You'll want to marinade it and/or slice it thinly across the grain to help tenderize. Also known as flap meat. This is a leaner cut with great flavor. Two steaks per package. Boneless.
