RECIPE: Summertime Watermelon Marinade

This super simple marinade recipe will add summer time flare to your next meal. We love it on our pasture raised chicken or on our Berkshire pork--the pork chops are great!

Ingredients:

  • Watermelon (you'll only use half)
  • 1/3 cup soy sauce
  • 1/4 cup simple syrup or similar
  • Garlic
  • Onion Powder
  • Ginger
  • Paprika
  • Red Pepper Flakes
  • Corn Startch


Directions:

  1. Puree 1/2 watermelon and sieve to remove solids.
  2. In a pot, combine watermelon, soy sauce, syrup, and seasonings to taste.
  3. Boil marinade to reduce volume by 2/3. (about 1 hr)
  4. Thicken with corn starch as needed.
  5. Marinade chicken for 3+ hours.
  6. Grill to perfection. We cook our drumsticks on a low heat, 10 min on the first side and 15 min on the second side. Shazam!
