Bacon-Wrapped Dates with Goat Cheese

These rich little bites are great for sharing with a crowd. A little goes a long way so everyone can have a bite of the best bacon around!
Ingredients
- (1 lb) Bacon
- (12 oz) Date Rolls (with coconut, if you like)
- (8-12 oz) Goat cheese crumbles
Directions
Tools you'll need:
- Tooth picks
- Parchment paper
- Cookie sheet
Instructions
- Preheat oven to 400°F
- Cut full length bacon strips in half to make them shorter.
- Wrap strips around dates and pin bacon end in place.
- Line cookie sheet with parchment paper and place bacon date rolls on end. Leave space between each roll so the bacon can crisp in the oven.
- Bake for 15-20 min, until bacon is beginning to sizzle.
- Pull cookie sheet from oven and place crumbles of goat cheese on top of each roll.
- Return cookie sheet to oven and bake until bacon is crispy brown, approx 15 min more. Note, you can turn the broiler on for the last minute or two so that the goat cheese and bacon get extra toasty.
